This coffee rocks!

Huila Valencia of Colombia is my favorite producer of Colombian coffee. This is the creamiest and smoothest washed mild coffee and the standard by which all others should be judged. The fresh grind is aromatic and fruity, even a bit sweet smelling. It has the cherry and the spice.

However, the sweetness of the grind dissipates in the cup to roasted barley and graham cracker. The lingering mouthfeel is very smooth: the whole effect of the coffee is smooth. 

Colombian coffee is true specialty coffee.

GROWER:  Asociación de Productores, Transformadores y Exportadores de Café del Municipio de Aipe - Huila (ASOPCAFA)
VARIETY:  Castillo, Caturra, Colombia, and Typica
REGION: Huila, Colombia
HARVEST:  May -August
ALTITUDE: 1,600 – 2,000 meters
SOIL:  Clay minerals
PROCESS:   Fully washed and dried in the sun
CERTIFICATIONS:   Fair Trade, Organic

This coffee is sourced from family-owned farms organized around Asociación de Productores, Transformadores y Exportadores de Café del Municipio de Aipe - Huila (ASOPCAFA).  ASOPCAFA is a producer association with 84 members who live in the municipality of Aipe within the department of Huila, Colombia.  On average, each producer cultivates coffee on 1.5 hectares of land and relies on the income from coffee production for a living.  ASOPCAFA provides technical support to assist coffee farmers with certifications and the best agricultural practices for quality coffee production.
