Ethiopian Sidamo Hunkute is an unusual, rare washed Ethiopian coffee. Washed coffees are produced by removing the sweet fruit of the coffee cherry before drying, resulting in a smooth, creamy, almost nutty cup.

Most African coffee varietals are known as "naturals," having been dried without the benefit of modern milling machinery. The washing process makes this current offering particularly unique among Ethiopian coffees.

Cupping this coffee with my crew was unusually fun; first impressions of this delicious roast were all over the place. In the nose, there are aromas of smokiness, roasted chestnuts, and just a touch of barbecue! The cup is full-bodied and malty, like freshly baked bread. One of our tasters likens it to a nut-brown ale, such as Newcastle or the Copper City Ale at the Old Bisbee Brewing Company. The finish is clean and slightly sweet, with hints of cocoa and caramel.

Also worth noting is that this coffee is organic and fair trade certified. The Fair Trade movement supports farming families in the developing world through reasonable labor prices, community development, and environmental stewardship. Buying Fair Trade coffee means that you directly support intentional, equitable agricultural practices.

This coffee is sourced from family-owned farms organized around the Hunkute Cooperative in the Wonsho district of the Sidamo Zone, Southern Nations, Nationalities, and Peoples' Region, Ethiopia.  The Hunkute Cooperative joined the Sidamo Coffee Farmers Cooperative Union (SCFCU), an umbrella organization established in 2001 to support a sustainable coffee supply from cooperatives in the Sidama region.  SCFCU supports forty-six cooperatives with more than 80,000 farmer-members.
